Passionate chef Toby Welfare has taken on the role of running Classroom on the Coast, the purpose-built cookery school located at The Stade in Hastings Old Town.

Toby said: “I’m focused on setting it up as somewhere where people can learn the art of cooking fish; understanding what is caught locally and making the most of what is available from the Hastings fishing fleet.

“I am passionate about fish cookery and want to make the subject much more accessible to people, so any one living here can take advantage of what is available on their doorstep and those outside Hastings can see what we have to offer.

“This July, to kick things off, Classroom on the Coast giving a lucky few the chance to cook in its beautiful purpose-built cookery school, for only £15.

“It’s a chance to learn filleting techniques, knife skills and all you need to know about preparing and cooking fish in the heart of Hastings’ famous fishing quarter.

“Our chefs demonstrate how to prepare and cook a delicious fish recipe which you then get to cook and eat.

“This is a unique experience moments from the famous fishing fleet and a stones throw from the sea and for the price of a main course in a restaurant you also get to learn some valuable culinary skills.

“Early classes begin with a delicious fish stew; a ‘one pot wonder’ demonstrating how to fillet flat and round fish and use what’s left over to form a stock for its base.”

Classes take place from Tuesday July 14 - Thursday 16 and on Monday July 21 and Tuesday 22.

Classroom on the Coast was established by Hastings Local Fisheries Action Group (FLAG).

It provides a programme for education and outreach, offers a unique venue and opportunity to share the knowledge and skills of fishermen, fishmongers, chefs, ecologists, marine organisations and educators to teach people about every aspect of fish from their habitats and the benefits of sustainable fishing methods to how to cook fish at home.
